The Raphael Hotel's signature restaurant, Chaz Restaurant & Lounge, is excited to announce the January features for the extremely popular rotating menu. Each month features a single, unique ingredient at the center of specially created dishes by Executive Chef David Spiven. Chaz's Certified Sommelier, Jordan Carver, pairs an exceptional Wine of the Month to compliment the carefully composed plates. The January featured ingredient is Napa Cabbage. It is a type of Chinese cabbage grown in mild, cool weather, originating in the Bejing, China region, widely used in Asian cuisine. Closely related to broccoli, bok choy and cauliflower, Napa Cabbage is referred to as the mustard of the cabbage family. It has crinkly, thick, light green leaves with while veins, and is a delicious, versatile vegetable. The Wine of the Month is Jonata Todos from Santa Ynez Valley, California. Robust dark fruit, buoyed by energetic acidity and buffered by soft and coating tannins. A seamless and approachable Todos.
