Each month features a single, unique ingredient at the center of specially created dishes by Executive Chef David Spiven. Chaz's Certified Sommelier, Jordan Carver, pairs an exceptional Wine of the Month to compliment the carefully composed plates. The December featured ingredient is Ahi Tuna. Ahi refers to two species, including Bigeye Tuna, and most commonly, Yellowfin Tuna. Ahi Tuna is a treat! It is of superior quality, tender, mild and oily, and is an excellent source of lean protein, low in saturated fats and sodium. It is loaded with niacin, vitamins B6, B12, phosphorous, selenium, magnesium and is a great source of Omega-3 fatty acids. The Wine of the Month is Unshackled Sparkling Rose from the Napa Valley region of California. Aged for 36 months en tirage to ensure the highest quality, this bubbles wine is made with chardonnay and pinot noir varietals sourced from California. Each sip features a vibrant acidity and a crisp, clean finish.
