Each month features a single, unique ingredient at the center of specially created dishes by Executive Chef David Spiven. Chaz's Certified Sommelier, Jordan Carver, pairs an exceptional Wine of the Month to compliment the carefully composed plates. The November featured ingredient is Oyster Mushrooms. Their delicate caps are amazing sauteed or roasted and their unique and subtle flavors lend themselves to a landscape of dishes. Chef Spiven has developed three exceptional dishes to highlight their versatility and flavor profile. While delicious, Oyster Mushrooms are also used for medicinal purposes, to treat high-cholesterol, infections, diabetes and other health issues. The Wine of the Month is Boomtown Syrah, a full-bodied red wine with silky tannins and aromas of red currants, red licorice and anise. It is juicy and meaty on the palate with a refreshing, floral finish.
