Each month features a single, unique ingredient at the center of specially created dishes by Executive Chef David Spiven. Chaz's Certified Sommelier, Jordan Carver, pairs an exceptional Wine of the Month to complement the carefully composed plates. The September featured ingredient is Brussels sprouts – cruciferous green gems packed with flavor and nutrients! Chef David has developed delightful recipes to bring out the mellow, nutty taste of the Brussels sprouts that pairs well with piquant cheeses and cured meats. The Wine of the Month is Marcel Dubois Vouvray, a medium-bodied white with fresh aromas of melon, lemons and minerals that are delightfully clean on the nose. Ripe juiciness explodes on the palate, quickly followed by refreshing minerality and lingering notes of white flowers, honeysuckle and lemon zest that work in harmony with the sprouts.
