About the Coravin Wine System: It is the most advanced wine preservation system to date. Conceived by Greg Lambrecht, an MIT educated nuclear engineer and inventor of medial apparatuses, the system employs a surgical procedure in which a thin, hollow needle is plunged down through the cork, keeping the seal functionally intact. As wine is transferred into the glass, it is replaced with an inert gas (Argon) that prevents the wine from interacting with oxygen. The expandability property of genuine cork allows itself to reseal. The wine can be preserved for months, if not years, and allow the restaurant to serve sampling sizes of exemplary wines without waste.
